Coleman's Legacy of Serving

Fred and Lois Lydgate Coleman owned and operated three restaurants on Kauai, including Ed & Don’s and the original restaurant at Lihue Airport. A gift from their estate to The Salvation Army on Kauai funds a new kitchen at the Lihue Corps. It will serve hundreds of meals a month to Kupuna, people experiencing homelessness, and families in need.

“Lois was a strong believer in The Salvation Army and an active participant in many of the programs during her time here,” said her niece, Jennifer Rinker. “My aunty would be thrilled to know the funds are being used for a new kitchen.”

Their legacy of serving the Kauai community through food and hospitality will live on through the service provided by the Fred and Lois Lydgate Coleman Memorial Kitchen at The Salvation Army’s Lihue Corps Community Center.
